For two:
INGREDIENTS
* 2 cups skinless, boneless, cooked chicken meat
* 1/4 cup sultana raisins
* 1 large mango, peeled, thinly sliced
* 2/3 cup mayonnaise
* 1 teaspoon mild curry powder
* 1 tablespoon mango chutney
* 1 teaspoon fresh lemon juice
* 1 pinch salt and ground black pepper
* 3/4 cup toasted cashews

DIRECTIONS
1. cut chicken into 1/2-inch strips.
2. In a large bowl, stir together chicken strips, raisins, and half of the mango.
3. In a medium bowl, mix together mayonnaise, curry powder, chutney, and lemon juice. Season with salt and pepper, then toss gently with chicken mixture. Stir in half the nuts. Transfer to a platter, and garnish with remaining mango strips and cashews.

The best way to get my kids to eat leftover chicken is to disguise it - and Mexican Tacos are a brilliant way to do it. If the chicken has been in the fridge reheat in the oven at 160C while you're heating the taco shells or stir-fry it quickly If you like, sprinkle chicken with taco seasoning - you can get it in most supermarkets
SERVES 4- 6 (change servings and units)
Ingredients
* 3/4 cup shredded monterey jack cheese or shredded cheddar cheese (or a mixture)
* 12 taco shells
* 3 cups cooked chicken
* 1 cup salsa
* 1 large avocado, diced
* 2 cups shredded lettuce
* 1 cup light sour cream
* chopped green chilies (optional)
Directions
1. Sprinkle 1 Tbs cheese in bottom of each taco shell and warm in 300° oven 5 minutes.
2. Mix chicken with salsa and avocado.
3. Put lettuce in taco shells, then chicken mixture, then sour cream.
4. If desired, sprinkle chopped green chillis over the top.

Leftover chicken ( 1 wing -and 1 breast are enough)
2 Shallots or half an onion -chopped
1/4 lb Mushrooms
1/2 c Chicken stock
1/2 c Grated parmesan cheese
1 c Heavy cream or fresh cream
1/2 lb Pasta ( linguini or -tagliarini or fetuccini), -cooked
Salt and pepper to taste
2 tb Butter
1 pn Nutmeg
1 pn Cayenne (optional)
Recipe
Shred chicken. Cook shallots and sliced mushrooms in butter until most of the liquid has evaporated. Stir in chicken,seasonings and broth. Bring to boil and cook 2 minutes. Stir in cream, bring to boil. Turn off heat and
add half the cheese. Stir in pasta to cmbine. Place into a buttered baking dish. Sprinkle the rest of the cheese on top and bake at 350 F for 30 minutes. Broil 3 to 5 minutes. Bon Apetit. Posted to TNT - Prodigy's

A Quiche makes a great lunch time snack as well as main meal from left over roasted chicken.
I could imagine pork and lamb would also work well..... |
